For Cinco de Mayo this year, start things off with Chef George Duran’s Mango Guacamole.
- 3 ripened avocados 3
- 1 ripened mango
- ¼ cup lime juice ¼ cup
- ½ cup cilantro ½ cup
- ½ cup white onion ½ cup
- 3 teaspoons salt
- In your IMUSA Molcajete, add half of the diced mangos and mash with the pestle into a pulp.
- Then add one avocado and mash into a pulp with the mango.
- In a separate bowl mix remaining ingredients, including mango, and add more lime juice if needed.
- Fold mixture with pulp inside Molcajete and serve with tortilla chips.
The IMUSA Granite Molcajete (pictured above) is available at Target for an affordable $19.99. If you don’t already have a mortar and pestle in your kitchen, this is a great place to start.
If you’re looking for something a little larger, take a look at the IMUSA Lava Rock Molcajete at Macy’s (MSRP: $59.99). This is a very nice molcajete, with my two caveats being that 1) you must season the molcajete first, which does take over a day and a little bit of effort on your part and 2) I would find a mat to place this on while using it to avoid scratching your table or countertop.
